They wanted all the characters to be high schoolers, so they adjusted the ages to be so(that means Pudding went from an elementary student to being in her first year in high school XD).
I got the original ages through merchandise. They have the girls' years of birth on some of them. All you have to do is the math to when the show takes place(which was 2002). Ryou and Keiichiro's ages were in the Playstation game guidebook. And Aoyama is in the same grade as Ichigo, so the age is the same(if he was older, she'd most likely be calling him Sempai).

I have no idea. Maybe they thought it was unrealistic for 13 year olds to be in that kind of a relationship. Or maybe they upped the ages so it'd be easier the audience to accept their changes in making them stereotypical valley girl teenagers XD. Heck, it could've been because they though that kids their age were too young to get a well paid part-time job XD.

...Being a waitress in a cafe is considered a well-paid job?

...ANYWAYS!!! Another name thing(except this one ain't so bad XD ) Am I the only one who thinks Wesley J. Coolridge the Third sounds somewhat epic? Especially coming from 4KIDS. I guess there is a problem with that, too, though. It turned him from a scientist with a name that probably means something special, to some random guy who mixed animal DNA into some teen girls and watches them work their butts off in a cafe, who has a name that makes him sound like he's royalty.
But I do hate how they changed Ryou's name. Ryou translates into Leo, which is a perfectly fine name for American children to hear (I have a cat named Leo, and my great grandfather from my mom's side of the family was named Leo), and they change it to Elliot. (BTW, any time I hear the name 'Elliot,' I think of that deer from Open Season .-. -shot- ) There's nothing wrong with the name 'Elliot,' except it kinda doesn't suit him... Even with 4KIDS stupid changes, I still think Ryou was a name that fit him perfectly.I guess nobody will ever understand 4KIDS. Ever.

4Kids was considering to name Ryou Ryan like the Italian dub but decided against it in the end. They were also going to call Norihiro(ep. 16) to just Nori like the Italian version too but ended up with Ian. Although you can see some things they took from the Italian version. Here's a list of name changes that they took from the Italian version:
Mark Mimi and Megan(Ichigo's Friends) Sergio(Mint's Brother) Also the term "eliminated" when Mini-Mew/Masha eats the jellyfish was originally used in the Italian version. Also, calling the big fragments of Mew/Blue Aqua a crystal originated from the Italian dub.

Yeah, but I still think it's that much of a personality change + a name that makes him sound like royalty. Also, did I mention that the cafe uniforms are extremely short(in all versions)? I wonder whether Ryou or Keiichiro came up with that. Maybe Kisshu disguised himself as a human and told them to make the uniforms short, just so he could see Ichigo in a short fan-service-y skirt in the one episode where he kept saying 'Dammit' over and over and over... and over... and over again... I think that episode is where 4KIDS stopped.

So the Italian dub came before the English dub?

Yeah, it finished a full year before the English dub even aired XD.
